Mexican Crockpot Chicken

Mexican Crockpot Chicken
Easy, flavorful crockpot chicken that is low in fat and high in protein with lots of good carbs.
Prep Time: 5 minutes
Cooking Time: 240 minutes
Serves: 6
Yield 6 cups
Ingredients
- 4 piece Chicken Breasts
- 15 1/2 oz Frijoles Negros Black Beans
- 15 1/4 oz Canned Corn (niblets)
- 10 1/5 oz Mild Diced Tomatoes & Green Chilies
- 8 oz Mild Chunky Salsa
- 2 tbsp Dried Onion Flakes
- 1/5 tsp Salt
Directions
1. Add the ingredients in the order above to the crockpot.
2. Cover and cook on low for 4 hours. Do not overcook! When done, remove the crock pot from the cooker.
5. Remove the rib bones and cut up into serving sized portions.
Serving suggestions: use whole wheat tortillas, sour cream, lettuce and tomatoes to make a fabulous, healthy mexican meal at home.
