Quinoa “Fried Rice”
Quinoa Fried Rice
Fried “rice” made from leftover ham and leftover quinoa.
Prep Time: 10 minutes
Cooking Time: 15 minutes
Serves: 8
Yield 4 cups
Ingredients
- 3 cups Quinoa Cooked
- 4 tbsp Vegetable Oil, Canola
- 1 medium Onion, Sweet
- 1/2 lb Ham, Baked
- 1/2 tbsp Butter
- 2 egg
- 3 tbsp Soy Sauce
Directions
1. Add the canola oil to the wok or pan and place on a high heat. When the oil is heated, add the onion. Cook until caramelized, but not burnt.
2. Add the quinoa to the wok and mix so that all the quinoa is lightly covered in oil. Cook for 10 minutes.
3. Add the diced ham and ginger and cook for another 5 minutes.
4. Push the quinoa and ham to the sides of the wok making a circular space in the middle. Add a small amount of canola oil and the butter to the middle. Let it melt and then add the eggs. Let the eggs start to harden and mix them into the quinoa on the sides.
5. Add the soy sauce and cook for a two more minutes.
Serve warm

This looks great, especially because I love quinoa. I don’t do onions, but I can substitute. However, I don’t see ginger in the ingredients list. I know that was true on the Livestrong version too, but how much ginger do you use, and do you use fresh or powdered?
